Character & Winemaking: For this special cuvée, we select only the oldest vines rooted in limestone and clay terraces at higher elevations. The lower yields from these vines result in highly concentrated flavors. After the night harvest, the grapes receive extra care in the winery: a portion is fermented and aged in oak barrels with regular lees stirring (bâtonnage) to develop roundness and complex nuances, while the remainder ferments in stainless steel to preserve vibrancy. After months of gentle maturation, the components are blended to create a rosé of unparalleled depth. This approach – akin to how certain renowned Provence rosés like Whispering Angel achieve their complexity – yields a gastronomic rosé that harmoniously balances finesse, freshness, and complexity.
